Banana walnut bread, with carrots.



Last night I made banana bread. Not just any banana bread, but one with walnuts in it (I normally deplore nuts in breads and desserts, but I tried it this time) and peeled carrots. What's this you say? Carrots in banana bread? Yes. Carrots. Thinly peeled bits of raw carrots (well, they were raw before baking them). This can't be too far out of the ordinary. I've seen banana bread with cucumber and/or zucchini in it. And those are vegetables, icky vegetable. So really, this isn't too strange. And you know what? I love it. Also, making banana bread involves smashing bananas, and that's fun!

I found the base for this recipe on Food Network, here. I substituted macadamia nuts for walnuts, and peeled about half of a good sized carrot and mixed it all together. I used my stand mixer with the paddle attachment to mix it all together, but after it was mixed, I had to remove the strings of carrot from the paddle and then mix it with a spoon. So, I suggest mixing everything but the carrots in the mixer and then stirring those in by hand.


This is very easy to make and came out moist and dense. I love banana bread. Ok, I love a lot of baked foods, but I do love this one as well.
